Roast 3 red peppers in the oven for 15 mins at 200 C / 400 then add to blender along with 1 can of chickpeas, 1 tbsp olive oil, s&p, blend until smooth
Sweet potatoes cut in stripes - bake for 20 mins at 200 C / 400 F
Pak choi sautéd in coconut oil
Mushrooms stuffed with vegan creamcheese (I used storebought)
1/2 Avocado with sesame
