Veganbowl with Roasted Red Pepper Sauce

Need some dinner inspo? How about a wonderful plate full of colours? Veganbowls are basically just big bowls of plant-based goodness!

All you will need for this plate is…

  • Roasted red pepper sauce:

    Roast 3 red peppers in the oven for 15 mins at 200 C / 400 then add to blender along with 1 can of chickpeas, 1 tbsp olive oil, s&p, blend until smooth

  • Sweet potatoes cut in stripes - bake for 20 mins at 200 C / 400 F

  • Pak choi sautéd in coconut oil

  • Mushrooms stuffed with vegan creamcheese (I used storebought)

  • Fresh radishes

  • 1/2 Avocado with sesame
