Pumpkin Pesto

This pesto was a spontaneous invention because my mother grew so many pumpkins in her garden! After having a fair share of soup and risotto I needed to come up with something else to make. This pesto is one to remember, so easy to make and really yummy. We had ours with edamame pasta.


1 small hokaido pumpkin

1 handful of walnuts

juice of 1/2 a lemon

1 tbsp agave syrup

1 tbsp olive oil


  1. Cut your pumpkin into cubes

  2. Sauté the cubes in a pan with salt and pepper until soft

  3. Roast a handful of walnuts for 5 mins in your oven

  4. Add pumpkin and walnuts to blender along with lemonjuice, olive oil, agave syrup and blend until smooth

  5. ENJOY!
