NASI GORENG with SEITAN

YOU WILL NEED

500 g cooked basmati rice

100 g seitan

1 cup frozen peas

1 onion

1 red pepper

1/2 cup pineapples

2 tbsp raisins

50 g cashews

1/2 red chili pepper

1 tsp curry powder

1 tbsp soya sauce

1 tbsp rapseed oil


METHOD:

  1. Fry cashews in a non-stick pan until golden brown (no oil required)

    -> set aside

  2. Fry rice with rapseed oil in pan, add 1 tsp curry powder and stir well

    -> set aside

  3. Fry seitan until crunchy

    -> set aside

  4. Combine chili pepper, onion, peas, sliced red pepper and fry in wok/pan for 2 mins

  5. Add pineapple and raisins and continue stiring for 2 mins

  6. Add seitan

  7. Add rice, stir

  8. Add soya sauce and stir well until everything is combined (on medium heat for 2 more mins)

  9. Garnish with cashews and enjoy!
